There are scores of oyster varieties in Virginia from across the seven distinct growing regions, and yes, you can tell a difference in taste from one to the other.
Some are salty; some are sweet. Some meet in the middle. There is bound to be an oyster—or two—or three—that you’ll love. You just have to start tasting. Now is as good of time as any: Gov. Terry McAuliffe has named November as Virginia Oyster Month. The Old Dominion is the nation’s third largest producer of marine products; Virginia is the leading East Coast seafood production state.
